While in Varanasi I had the opportunity to partake in fresh water buffalo milk, cheese, and yogurt. I was skeptical but it turned out to be super yummy! The creaminess of milk and cheese when it hasn't been processed to remove enzymes and flavor is beyond compare. It was the first time I'd had fresh milk and the flavor was unlike anything I'd tried. And not just because it was from water buffalo. About a month later in McLeod Ganj I had the "opportunity" to experience what yak cheese and butter tea in my mouth was like and let's just say that my Western tongue isn't quite as adventurous as I like to believe. I got it down because others were around. But let's just say I'd need some real motivation to acquire a taste for yak cheese and butter tea.
