Prep Work - Date Paste
Pour dates and enough water to cover them into a bowl and soak overnight. In the morning they will be swollen and soft. Pit them and blend for longer than you think you should in a Vitamix or other blender. I blend them for around 2 mins. You want to blend up the date skins. Store in fridge for up to two weeks.
Vanilla Ice Cream
Ice cream maker (I use a Cuisinart). Make sure you freeze the drum for at least 24 hours beforehand, otherwise your ice cream won't set up.
1 cup whole milk
1 cup heavy cream
2 teaspoons vanilla
Pinch of salt
3/4 - 1 cup date paste (depending on your taste)
Combine in a mixer, adding the whipping cream last and mixing till combined but not so much that you whip the cream. Pour into your ice cream maker and wait 30 or mins till it reaches your desired consistency.
I like to spoon the finished ice cream into single serving containers because its easier this way with every homemade ice cream I've ever made.

1/2 cup unsweetened cocoa powder
1 cup date paste (more or less depending on your taste)
1/2 cup cold water
1 1/2 teaspoons vanilla
Pinch of salt
In a cold saucepan combine cocoa and date paste and heat on medium till not quite boiling. Add salt and water. Remove from heat and add vanilla. Store in fridge for up to two weeks.
